Looking for a cake I could make with store cupboard ingredients, I decided to check out my gran’s old recipe book. In the back, scribbled on a few lines I found this… hardly even a recipe, the method fits on a single line. But I gave it a go and remarkably it works…
I’d say this recipe is even easier than a Victoria sponge since there’s no beating of cream and sugar. It makes a dense-ish fruit loaf which goes well with a cup of tea and keeps well too.

This was a nice surprise for a Sunday bake. Looking for something easy to make with store cupboard ingredients, I looked in my gran’s old recipe notes. I spotted a few lines written next to the address of a dress shop… hardly even a recipe. Just heat butter, sugar fruit and water in a pan. Then add self raising flour and an egg and bake. End result? A cracking fruit cake, perfect with a cup of tea. - 2 cups of dried fruit
- 1 cup of sugar
- 115g of unsalted butter
- 1 cup of water
- 2 cups of self raising flour
- 1 large egg (beaten)
- Put the fruit, sugar, butter and water in a saucepan and heat until the butter melts and you can stir everything together.
- Transfer to a bowl and mix in the flour and egg.
- That’s it! Transfer to a loaf tin and bake at 180°C for about an hour.
