Another of Paul’s vicarious recipes! I forgot to add cream and lemon juice at the end, and went off-recipe with a glug of vermouth to deglaze the pan, but otherwise this was, more or less, braised chicken breasts with cannellini, leeks and rosemary. Real Cooking time: 30 mins preparation and cooking
This recipe was supposed to have cream and lemon juice stirred through before serving. We forgot, but it didn’t taste any less delicious for it. Other changes were coating the chicken in cornflour before searing (I pretty much always do that when pan-frying chicken), and deglazing the pan with vermouth.

- 2 chicken breasts
- 1 400-ish gram tin cannellini beans
- 1 large leek
- 1 stick celery
- Chicken stock
- Salt and pepper
