Pollo a la Cacciatore (Hunter’s Chicken)

This recipe from Nigella Express is one of my “go to” recipes for when I want something tasty and easy. A couple of substitutions though – dried rosemary instead of fresh, and dry vermouth rather than opening a bottle of white wine for the occasion (man flu recovery is still ongoing in the 2HB house).

Salmon and Spinach with Lemon, Caper and Parsley Sauce

A healthy dinner tonight, courtesy of BBC Good Food. Always worth reading through the comments when trying an online recipe: the teaspoon of wholegrain mustard added to the sauce recommended by some commenters definitely helped.

Quick Chicken Korma

I love a good curry, but have had limited success making them myself. This Nigel Slater recipe may not be an authentic korma, but it tastes great and only takes 30 minutes to prepare.

That said, it takes me slightly longer than 30 minutes because I try and get everything prepared in advance to avoid any risk of burning the spices. The end result is neither the healthiest or most visually appealing of meals, but it tastes bloody marvellous.

Scallops and Chorizo with Chickpeas and Rocket

An old favourite from Nigella Express. Actually, it’s two separate dishes – the chickpeas and rocket can be used as a side dish.

Bananas Baked with Cardamom and Orange

A quick and (fairly) healthy pudding here. I deviated from Nigel’s recipe slightly, using dark muscovado sugar instead of brown simply because it was what we had in the cupboard.

Time for some healthy pudding? Banana, orange and cardamom!

I loved this, but Mark was less convinced. It was sweet but strangely didn’t really taste much of banana!

Salmon in Watercress Sauce

A nice easy one tonight. Grill the salmon in butter, then make up a sauce from cream, lemon juice, chopped watercress and the juices from the salmon.

We both enjoyed it, but I think Mark enjoyed it more than me! I also added a side of broccoli fried in oyster sauce – another Nigel Slater classic.

Korean Keema

The trickiest part with this one is finding somewhere to buy gochujang sauce. Also, tonight we didn’t have any rice wine in so we used Amontillado sherry instead which worked really well.

Cooking the sushi rice takes the longest – about half an hour. The actual turkey keema takes about 10 minutes.
