Nigel Slater has a knack for producing recipes which use a very short list of ingredients but produce something which tastes out of this world. Tonight’s dinner is a prime example of that, and comes from Appetite.
It’s so incredibly simple… toss a couple of pork chops in a little flour and then pan fry them in some butter (maybe with a drop of olive oil to stop the butter from burning). Then set them to one side and use a good splosh of marsala to get turn the burnt on bits in the pan into a gravy – reduce it down a little with some tarragon thrown in. AND YOU’RE DONE. That’s really all there is to it.

We served ours with some mashed potatoes (very good for mopping up the sauce) and some petit pois – and easy way to add some veg to the meal.
This recipe is so easy you can hardly even call it a recipe, but the end result was incredibly tasty – you’d be happy if you got it in a restaurant!
