Tonight’s dinner was a slight more frugal affair than I had anticipated because an online shopping substitution left me with half the amount of lamb I was hoping for. This summery recipe comes from Nigellissima: Instant Italian Inspiration.
Nigella suggests steaming the potatoes but we boiled them first. The lamb sits in olive oil, chilli flakes, dried mint and celery salt for 10 minutes before pan frying. Then the lamb gets transferred to a bed of rocket and the potatoes get fried in the lamb fat and olive oil seasoning.
It was definitely a light supper but a tasty one. It was a good job our friends Ben and Jerry were on hand for dessert. Cookie Dough flavour, in case you’re wondering.
