Venetian Carrot Cake

I love carrot cake. Love love love it. Last week’s vegetable loaded cake got me thinking about it again, but rather than making the stereotypical carrot cake I decided to revisit this version from Nigella Kitchen.

This cake is really special – light and soft, probably because it’s made with olive oil and ground almonds but this also means it’s gluten and dairy free if that’s important for you. I’d also like to pretend that the carrots and sultanas make it healthy…
