Roast Radish, New Potato and Smoked Mackerel Salad

An attempt to eat more oily fish, this is the first of two fish dishes this week.

Following the recipe at BBC Good Food, new potatoes and radishes are halved, seasoned, drizzled in oil and baked for thirty minutes. Meanwhile, greek yogurt is mixed with a crushed garlic clove, dill and lemon juice to create a creamy, herby dressing for leaves of lambs lettuce.

The dressed leaves are topped with the roasted vegetables, before finally smoked mackerel is flaked over the top.

I’m not sure that the roast radishes added anything other than colour to the dish, but fresh, light dressing and oily saltiness of the fish made for a delicious meal in any case.
