We really enjoyed the Chocolate Cherry Cupcakes which I made last Friday, and since then we’ve been fancying something sweet. A rummage through the cupboards revealed we had everything necessary to make Nigella’s Marmalade Pudding Cake which comes from Kitchen.
It’s a nice easy recipe – Nigella suggests using a food processor but, as I’m sure I’ve mentioned before, I don’t seem to have much success with food processors. Instead I mixed it by hand – you can do the whole thing in one bowl, then transfer to a dish and bake in the over. Afterwards you glaze it with a mix of orange juice and marmalade.
It’s quick and easy, and incredibly tasty. But we did manage to make one improvement – serving it with a big blob of warm custard.
