Spring Chicken

I’d planned to make this since the weekend, so it was a surprise when it showed up on Nigella’s Twitter and Instagram accounts as her recipe of the day yesterday. The recipe can be found in Kitchen, which is probably my favourite of Nigella’s books.

There’s plenty of veg in this one – leeks, peas, lettuce and celery (although we’d run out of celery so I had to skip that). I also threw in some new potatoes whilst it simmered, rather than having to wash another pan afterwards!
