Harissa Chicken Traybake with Roasted Red Onion and Butternut Squash

With a successful introduction to using harissa as an ingredient with our recent halloumi burgers, this Harissa Chicken recipe spied on BBC Good Food was a good excuse to use up the jar.

The butternut squash is probably unseasonal and massively offensive to environmentalists. It was also far to much, with only about half of the door-stop that arrived in the Sainsbury’s delivery making it into the traybake.

The recipe called for roasted the veg for 10 minutes while the chicken marinated in a yogurt-harissa paste, before adding the chicken for a further 25 minutes. Both steps could have done with being a little longer: the squash was somewhat soggy rather than baked and caramelised as hoped for, while the chicken, though perfectly moist and tender, would have been even better had it developed a gnarly, crunchy texture.
