Sometimes it’s OK to mix and match parts of a recipe, and this plum tart is a good example. The sweet shortcrust pastry is from Lorraine Pascale , while the frangipane filling came from the Tesco recipe website – a first use of this by Two Hungry Boys.
An added benefit of these two recipes as that they created enough for two 20cm tins, although for appearance we really need to buy a fluted quiche tin.
The pastry was a little crumbly, in spite of having followed the advice of the recipe and adding a splash of cream. A good deal of patching up had to take place when draped into the tins, leading to a slightly uneven thickness. Nothing that a good drizzle of cream when served won’t hide.
