Spanish Chicken with Chorizo and Potatoes

Trust Nigella Lawson’s recipe books to offer a solution for a quick to prepare, lazy Sunday roast. This one from Kitchen: Recipes from the Heart of the Home is particularly easy, requiring few ingredients and very little to be done to them. Simply spread halved new potatoes in the bottom of a roasting dish, layer on hefty chunks of chorizo, and finally chicken thighs.

Not for the faint of heart, this used a whole chorizo for the two of us: the potatoes cook underneath, bathing in the salty chorizo fat. We had to go for a walk afterwards. A long walk.

A note of caution on the recipe: it called for a scattering of chopped red onion and oregano over the chicken layer, but this started to charr in the oven and had to be mixed in with the potato layer part way.
