Tandoori Chicken with Roasted Broccoli

A recipe from Jamie Oliver’s website, I’m torn as to whether this is suitable for midweek meals. The actual cooking was very easy, simply roasting the chicken in tin foil, and the broccoli florets on a baking try with a dusting of salt, pepper and garam masala.

This problem is that the chicken needs to marinate in a yogurt mixture overnight, so needs some thought the night before. The marinade, made from yogurt, lemon juice, spices, chillies, ginger, garlic and coriander had the surprising effect of making the finished chicken moist and juicy, while creating a crispy, gnarly spiced coating which was really very good.

A very tasty dinner, with the added bonus of being low in fat and calories. The roasted broccoli was a revelation, though. The seasoned, cripsy, spicy little florets were as tasty and easy to eat as potato chips. We’ll definitely cook broccoli this way again.
