Garlic Mushrooms with Pancetta and Halloumi on Toast

A late night and an early morning helped us build up an appetite, so this is quite an indulgent lunch, inspired by a very tasty lunch eaten some time ago at Federal.

The pancetta was fried in a dry pan to release the fat, before adding the halved button mushrooms, sliced garlic, and a knob of butter. The sliced halloumi was dry fried in a second pan to chewy, crispy perfection.

Best served with a cup of tea.

A late night and a busy morning – a rather indulgent lunch is called for.
