Chicken Methi

Curry is a bit of an obsession for us two hungry boys: so many meals out are spent at the curry house, but homemade curries just tend not to taste ‘right’.

Until recently.

It’s possible to make a very convincing chicken methi at home using fenugreek powder (‘methi’ is just fenugreek leaf), and by using the food processor to make a paste out of garlic, onion, fresh ginger and chillies. The paste is then fried in oil (but don’t use olive oil!) with salt, before adding the spices, then the chicken, and finally a carton of chopped tomatoes.
