Chicken Fried in Orange with Mint

This recipe comes from Nigel Slater’s The 30-Minute Cook, but it’s almost a passing comment rather than a full on recipe. Very easy to do – rub the chicken in oil and salt, fry for a few minutes, then add the juice of two oranges and reduce.

Dinner tonight will be chicken with orange and mint – a Nigel Slater favourite.

Served it up with some new potatoes and another Nigel Slater classic – broccoli fried in oyster sauce.
