Poached Egg and Pancetta Brunch

We always seem to have a lonely packet of pancetta skulking around in the fridge (perhaps because so much of our cooking is thanks to pancetta-fan Nigella Lawson ), so this made for an easy Sunday brunch.

The secret to perfect poached eggs is cider vinegar, salt, and heat: the pan should be bubbling furiously, then turn low while you carefully drop the eggs in using a coffee cup before cranking the heat up again.
