Sun Dried Tomato and Kalamata Olive Pizza

How long after the ‘best before date’ can you use instant yeast? Turns out at least four months, with the last sachet of yeast in the store cupboard making some delicious pizza bases. I’ve tried many variations on the basic pizza dough recipe (but type 00 flour and a large glug of olive oil are essential), but for this I used 150 ml of water and 250g of flour, a large pinch of kosher salt and a teaspoon of golden caster sugar. I also dusted the under side of the rolled out dough with cornmeal: they didn’t stick to the baking sheets and came out crispy.
